Fruit and Nut Balls
These sweet treats are tasty and high in fibre. You can choose to use other dried fruit e.g., raisins, sultanas or craisins, and make up the 2 ⅓ cups of dried fruit with whatever you have in your pantry.
They make an ideal snack and are great to give as a gift.

Makes 20 Balls
What you need:
¼ cup almonds, natural
½ cup desiccated coconut
⅓ cup dried apricots, roughly chopped
1 cup dates, roughly chopped
1 cup prunes, roughly chopped
1 orange, zest and juice
Extra coconut for rolling
Method
Place the almonds in a food processor and chop finely. Add coconut.
Add the dried fruits and chop finely.
Add orange zest and juice and mix thoroughly.
Shape into small balls (large walnut size) and roll in coconut.
Store in the refrigerator.
