Fruit and Nut Balls

These sweet treats are tasty and high in fibre.  You can choose to use other dried fruit e.g., raisins, sultanas or craisins, and make up the 2 ⅓ cups of dried fruit with whatever you have in your pantry.

They make an ideal snack and are great to give as a gift.

Makes 20 Balls


What you need:                                                                      

  • ¼ cup almonds, natural       

  • ½ cup desiccated coconut                                                                                             

  • ⅓ cup dried apricots, roughly chopped                                            

  • 1 cup dates, roughly chopped                                                                                     

  • 1 cup prunes, roughly chopped                                                               

  • 1 orange, zest and juice                                                                 

  • Extra coconut for rolling                                                                                                      


Method

  • Place the almonds in a food processor and chop finely. Add coconut.

  • Add the dried fruits and chop finely.

  • Add orange zest and juice and mix thoroughly.

  • Shape into small balls (large walnut size) and roll in coconut.

  • Store in the refrigerator.
