Fruit and Nut Balls
These sweet treats are tasty and high in fibre. You can choose to use other dried fruit e.g., raisins, sultanas or craisins, and make up the 2 ⅓ cups of dried fruit with whatever you have in your pantry.
They make an ideal snack and are great to give as a gift.

What you need:
- ¼ cup almonds, natural 
- ½ cup desiccated coconut 
- ⅓ cup dried apricots, roughly chopped 
- 1 cup dates, roughly chopped 
- 1 cup prunes, roughly chopped 
- 1 orange, zest and juice 
- Extra coconut for rolling 
Method
- Place the almonds in a food processor and chop finely. Add coconut. 
- Add the dried fruits and chop finely. 
- Add orange zest and juice and mix thoroughly. 
- Shape into small balls (large walnut size) and roll in coconut. 
- Store in the refrigerator.
