Winter Warming Casserole

Enjoy this easy to make comforting casserole when the days get shorter, and the nights longer. Add vegetables that are in season or whatever you have in the fridge or pantry.

What you need

  • 500g stewing steak - good cuts are blade or chuck steak, gravy or shin beef

  • 2 tablespoons flour

  • 1 tablespoon oil

  • 1 large onion, peeled and chopped

  • 2 cloves garlic, finely chopped

  • 2 cups vegetables e.g. carrots, celery, pumpkin, potato, kūmara

  • 2 tablespoons tomato paste

  • 1 1/2 cups water

  • 2 teaspoons beef stock


Method

  • Preheat oven to 160 degrees

  • Remove all visible fat from the meat and cup into 2 cm cubes

  • Place flour in a bag. Add diced meat and shake bag to cover meat with flour

  • Heat oil in a large fry pan and brown the meat over a moderately high heat. Transfer to a casserole dish

  • Add onion, garlic and vegetables to casserole dish

  • In a jug mix together tomato paste, water and beef stock powder. Pour over the meat and vegetables in the casserole dish

  • Cover and cook for 2 1/2 - 3 hours until meat is tender


Tips

  • Add 1/2 cup red lentils OR 1/2 cup prunes to add some extra fibre and goodness

  • If you live by yourself, make enough for 4 servings, and freeze your leftover portions. Don’t forget to date and name each portion.

Serve with …

  • Rice, mashed potato or jacket potato
