Solomon poi

This recipe from the Solomon Islands is based on pumpkin and kūmara. It makes a great side dish to have with chicken, fish or meat.

30 minutes + 1 hour cooking time

What you need

  • 2 kūmara, peeled and grated

  • 1/4 pumpkin, peeled and grated

  • 6 large silverbeet leaves, finely sliced (include the stalks, but make sure they are very finely sliced)

  • 1/2 can coconut milk

  • Pepper to taste


Method

  • Preheat oven to 180◦C.

  • Combine all the ingredients and mix thoroughly.

  • Line a baking dish with tinfoil, allowing enough to fold over the top.

  • Place the mixture into the baking dish. Fold over the ends of the tinfoil to make a parcel.

  • Bake for one hour.
